
This one is a classic, in my opinion. Growing up, my mom made cheeseburger pie all the time. It was a favorite and actually is still my brother’s favorite to this day. I hadn’t had it in years and then all of sudden one day I remembered it. I decided I needed to recreate this childhood classic with my spin on it. Of course it was also fully necessary for me to just load it up with cheese, because would I be a true lactose sensitive person if I DIDN’T have an unhealthy and undying addiction to cheese? Probably not😂 Anyway, this isn’t the exact recipe my mom used to make, but when I eat it, it still brings me all the same love and comfort. Hopefully it can do that for you too!
Ingredients:
- 1/4 yellow onion, small diced
- 1 clove garlic, minced
- 1 lb ground beef
- 3/4 tsp salt
- 3/4 tsp pepper
- 1/2 tsp chili powder
- 1 tsp tomato paste
- 3/4 cup whole milk
- 3 eggs
- 3/4 cup Original Bisquick mix
- 1 1/2 cup shredded cheddar cheese

*Makes about 6 large servings*
Directions:
1. Preheat the oven to 400ºF.

2. In a medium pan, sauté the diced onion.

3. Add the garlic and continue to sauté until everything is golden brown and the onion is translucent.

4. Add the ground beef to the pan and continue to cook.

5. Add 1/2 tsp of salt, 1/2 tsp pepper, and 1/4 tsp of chili powder to the meat and continue cooking until the ground beef is browned.

6. Turn off the heat. Add the tomato paste to the pan and stir it all together.


7. In a medium bowl, add the eggs to the milk.

8. Add the Bisquick mix to the small bowl and the remaining 1/4 tsp salt, 1/4 tsp pepper, and 1/4 tsp chili powder. Then mix it all together until there are no lumps in the batter.

9. Put one cup of the shredded cheese into the bowl and stir it in to the batter.

10. Grease a 9×9 inch casserole dish and pour the ground beef in, making sure it is spread evenly in the dish.


11. Pour the Bisquick and cheese mixture over the ground beef, again making sure it’s spread evenly across the dish.

11. Place the dish in the oven and bake for 25 minutes or until firm and golden brown.

12. Immediately sprinkle the remaining 1/2 cup of shredded cheese on top and place the dish back in the oven. Bake for an additional 10-15 minutes or until the cheese is crispy and golden on top.

Enjoy with a nice salad or veggie and toppings of your choice. Ketchup is always a favorite!
