Birthday Cake Cookies

Hi friends! I know it has been a few months since I last posted a new recipe (I know, this sounds similar to the intro of my last post too). You would not believe the craziness 2022 has been for me, including almost losing one of my cats to illness, graduating with my Associate’s degree, starting at a new university fully online, a surgery on my back, a much needed vacation with my hubby, rebuilding this website, and so many things in between. Nevertheless, I am back with a brand new and improved website ready for all of our baking and cooking needs! We have transferred all of the old recipes you know and love, and I am so glad to say that we will be posting a new recipe every month for the foreseeable future! I am so glad you are here, and if you have stuck around all these months waiting for new recipes, thank you for your continued support. Truly. To celebrate my return, we are going to kickstart things with this brand new recipe for birthday cake cookies! These truly are my favorite and sure do taste like a party. They are super easy and the perfect any time or party time treat! Let’s jump in and get to it!

Ingredients:

  • 3/4 cup sugar
  • 1/3 cup butter, melted and cooled slightly
  • 2 tbsp sour cream
  • 2 tbsp vegetable oil
  • 1 egg
  • 1 tsp clear vanilla (regular works too, it just makes the cookies a little darker in color)
  • 1 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • 1 tsp whole milk
  • 1/2 cup jimmies (sprinkles)
  • 1/3 cup white chips

*Makes about 12 large cookies*

Directions:

1. Preheat your oven to 350ºF.

2. In a medium mixing bowl, combine the butter and sugar.

3. Add the egg, oil, sour cream, and vanilla to the bowl, and mix until everything is well combined.

4. In a separate bowl, combine the flour, baking powder, baking soda, and salt.

5. Add the flour mixture to the butter mixture and mix until just combined.

6. Add the milk in and mix once more. Be sure to scrape the bowl to ensure all the ingredients are incorporated.

7. Pour the jimmies and the white chips into the bowl and gently stir to combine.

8. Grease a cookie sheet.

9. Then take large spoonfuls of the dough and roll into balls. We’re making some good size cookies here, so make sure the balls are about 2 inches in size. Place the balls about 3 inches apart on the cookie sheet.

10. Place the cookie sheet in the preheated oven and bake for about 15 minutes or until the edges of the cookies are firm but the middles are still soft (but not raw).

11. Remove from the oven and let cool on the baking sheet. Repeat steps 9 and 10 until the dough is all gone. When cookies are completely cooled, they can be stored in air tight containers for up to 5 days.
