Cinnamon & Spice Cupcakes

Hello all! I hope you’ve had a wonderful start to the new year. I know I haven’t posted a new recipe in a few months and I’m sure you’ve wondered what happened. Life has been absolutely crazy lately, but I am finally back and ready to share some amazing new recipes with you all, starting with these wonderful, wintery, cinnamon & spice cupcakes! These go great with a hot cup of coffee or a warm apple cider, and they’re just as good with a cold glass of milk in the summer! Ingredients:

Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground all-spice
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 2 eggs, at room temperature
  • 3/4 cup whole milk
  • 1 tsp vanilla

Buttercream Frosting:

  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla
  • 1 tbsp whole milk

Topping:

  • 2 tbsp sugar
  • 1/2 tsp cinnamon

Directions:

Cupakes:

1. Preheat oven to 350°F.

2. In a medium bowl, mix together the flour, baking powder, salt, cinnamon, ground nutmeg, and ground all-spice.

3. In a separate bowl, cream together the softened butter, sugar, and brown sugar until fluffy.

4. Add in the eggs one at time, mixing thoroughly after each.

5. Add 1/3 of the flour mixture from step 2. Mix until just combined.

6. Add half of the milk and continue mixing. Continue with the alternating additions of the flour mixture and then milk until you have used all of the flour mixture and milk. The batter should be thick and fluffy.

7. When everything is just combined, add the vanilla, and mix until combined.

8. Grease a cupcake pan and pour batter into wells until each is about 3/4 of the way full. You may also use cupcake liners if you prefer to.

9. Place cupcake tray in preheated oven and bake for 25 minutes or until a toothpick insert into the center of a cupcake comes out clean.

Cool completely before frosting.

Buttercream:

1. In a medium bowl, beat the softened butter until light and fluffy.

2. Add the powdered sugar and continue to beat together until combined.

3. Add the milk and vanilla and continue beating the mixture until well mixed and light and fluffy.

4. Frost cupcakes generously once they are completely cooled.

Topping:

1. Whisk together the sugar and cinnamon until fully mixed.

2. Sprinkle each cupcake with as much or as little of the topping as you like. Enjoy!
