
If you are like me, you love french fries. I could eat them every day. I love them in many ways. I like plain, salty ones. I like cheesy fries, or seasoned fries. I like skinny fries and steak fries. Basically what I’m saying is that I love fries and I don’t discriminate against any type of them. However, I have found that homemade fries can be difficult to get just perfect. Sometimes they come out not crispy enough or not salty enough, plus I hate deep frying things. So I prefer to bake them. Well, these fries turn out every time! They are super easy and take out the need to deep fry. I make them in a cast iron pan, but if you don’t have one, you can still roast them in a sheet tray. Let’s jump in!
Ingredients:
- 2 pounds of potatoes (russet or gold)
- 3/4 tsp salt
- 1/2 tsp ground pepper
- 1 tsp rosemary
- 1/2 tsp thyme
- 1/2 tsp garlic powder
- 3/4 tsp paprika
- 3/4 tsp parsley
- 1/3 cup grated parmesan
- 4 tbsp olive oil

Directions:
1. Preheat oven to 450ºF.

2. Wash the potatoes and then dry them thoroughly.

3. Cut them into sticks, by cutting each potato in half three times. Leave the peels on.



4. Put all of the cut potatoes into a large bowl.

5. In a separate bowl, mix all of the seasonings together so that they are mixed well.


6. Pour about 2 tablespoons of the olive oil over the cut potatoes. Then toss to coat the potatoes thoroughly.

7. Next, sprinkle all of the seasonings and half of the grated parmesan over the potatoes. Again, toss well to thoroughly coat the fries in the seasonings.


8. Coat the pan you are roasting the potatoes in with about a tablespoon of olive oil. This step is important, especially if using cast iron, to keep the fries from sticking to the pan.

9. Pour the coated potatoes into the pan and then shake the pan to disperse the fries across the pan evenly.

10. Place the pan in the preheated oven and roast for 30 minutes.
11. After 30 minutes, flip the fries over and drizzle with the last tablespoon of olive oil.

12. Return pan to oven and cook for an additional 15 minutes.
13. After the fries are done, leave them in the pan and immediately sprinkle on the grated parmesan.

14. Let the fries cool for a few minutes and then enjoy!
