Easy Roasted Asparagus

To be honest, I am definitely not a fan of asparagus. It wouldn’t necessarily be my last choice for veggies, but definitely far from first choice. Anyway, it’s really good for you and my hubby enjoys it. So I had to come up with a way that would make it edible for meπŸ˜… Well, what better way than to cover it in cheese and garlic? That’s exactly what we’re going to do. Plus, this recipe is super easy and pretty quick too. Let’s jump in!

Ingredients:

  • 8 stalks asparagus, washed, ends removed
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup grated parmesan
  • 1 clove garlic, minced

*Makes 2 servings. Can easily be doubled, or even tripled*

Directions:

1. Preheat your oven to 375℉.

2. Arrange the washed and cut asparagus on a baking sheet lined with foil. Then drizzle the olive oil across all of the stalks.

3. Sprinkle on the salt and pepper, and minced garlic.

4. Sprinkle on about 1/2 of the parmesan.

5. Roll the asparagus around to make sure each stalk is coated in all the ingredients.

6. Bake for 20 minutes or until the asparagus is soft but not mushy, and the cheese is golden brown.

7. Let it cool for a few minutes and then sprinkle the remaining grated parmesan on the asparagus once you have it on the plates.
