I know things have been a little crazy lately. Part of the craziness has the stores virtually empty, at least out here anyway. Thankfully, we were able to get a little extra at the store before this all happened. However, our options are still limited and I’m sure it’s that way for many others. So last night I decided to make a homemade alfredo sauce with stuff I already had in my fridge. It turned out to be really tasty! I also added some mushrooms, because why not? Since I just used some stuff I already had, I’m hoping if you want to try this recipe, you will just happen to have these things in your fridge too so you don’t have to go out and deal with the madness at the stores. You can use any noodles you can get your hands on or have in your cupboards already. Maybe even put it over some zoodles or add some broccoli. I love alfredo sauce and this one is no different, so be sure to dress it up or down as much as you’d like!
Ingredients:
- 1 tbsp butter
- 1/4 yellow onion, finely diced
- 2 cloves minced garlic
- 4 oz cream cheese
- 1/2 cup reserved pasta water from boiling the noodles
- 1 cup shredded mozzarella cheese
- 1 cup grated parmesan cheese
- 1 1/2 cups half & half
- 1/2 tsp oregano
- salt and pepper to taste
Directions:
1. Boil your noodles according to the package instructions and reserve 1 cup of pasta water before draining.
2. Melt the butter in a large pan over medium-high heat and then sauté the diced onion and garlic. (I added my mushrooms at this point too, but they are 100% optional)
3. Add the cream cheese and stir it around until it starts to melt.
4. Add the pasta water and stir until the cream cheese is fully melted and the sauce looks creamy.
5. Add the shredded mozzarella and stir until melted.
6. Add the parmesan and mix well.
7. Slowly stir in the half & half, mixing the entire time you are pouring it in.
8. When the sauce is combined well, creamy,
and smooth, add the oregano and salt and pepper to
taste.
9. Let the sauce simmer a bit to thicken up some. Then add your noodles in and stir until the sauce is covering all the noodles. Enjoy!
