Cheesy Roasted Potatoes

Awhile back, I had dinner at my wonderful friend, Amber’s, house. Her husband grilled us some delicious steaks and she made these INCREDIBLE roasted potatoes in her air fryer. I really enjoyed sitting down to dinner with them and their adorable daughter, just enjoying their company and REALLY enjoying the tasty food they’d prepared for us. Now, I’ve had roasted potatoes before, but somewhere between helping her cook and reminiscing on our old times in our cooking classes, these potatoes turned out to be the best I’ve ever had. When I returned home from my visit, I just couldn’t stop thinking about them! So a little while later, I was making dinner and I thought, “You know what? Those roasted potatoes that Amber made would go perfect with this dinner!” However, I don’t have an air fryer and with all good things, I must overdo it with either cheese, or chocolate πŸ˜… So I decided I would make my own version of Amber’s delicious roasted potatoes, but I would use my oven and load them up with cheese! The result was so wonderful, I just couldn’t stop eating them and my husband was equally indulging in their deliciousness. I sent a picture of these cheesy, crispy potatoes to Amber and thanked her for giving me the idea for this recipe. She was very pleased to know she helped me concoct such a delicious side dish and encouraged me to put the recipe here on the blog for you all to see. So, I made the recipe one more time, writing down my measurements this time, and now here we are! Thank you again, Amber, for the wonderful dinner and this delicious idea! I think I’m going to refer to these as Amber Inspired Potatoes from now on!

Ingredients:

  • 2 large russet potatoes (like the Costco sized ones) OR 4 regular sized ones (golden potatoes also taste delicious in this recipe!)
  • 3 tbsp olive oil
  • 1/2 tsp pepper
  • 1 tsp coarse sea salt
  • 1/2 tsp garlic powder
  • 1/3 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese

    *makes 3-4 servings*

Directions:

1. Preheat the oven to 450℉

2. Rinse the potatoes and make sure to get all the dirt off.

3. Dice the potatoes into bite sized pieces.

4. Place the potatoes in a bowl and pour the olive oil over them.

5. Sprinkle on the pepper, sea salt, and garlic powder.

6. Sprinkle on the parmesan.

7. Using your clean hands or a spoon, stir the potatoes, olive oil, seasonings, and parmesan until all of the potato pieces are well coated in everything.

8. Spray a sheet pan with some cooking spray so the potatoes don’t stick and then spread the potatoes out evenly on the tray, being sure they are all in a single layer.

9. Bake the potatoes in the preheated oven for 15 minutes.Then take them out and flip them all over with a spatula. Return them to the oven for another 10 minutes. Baking for a total of 25 minutes, or until the potatoes are soft when poked with a fork.

10. After the total 25 minutes, remove the potatoes from the oven and immediately sprinkle the shredded mozzarella over them evenly.

11. Let the potatoes sit for about 5 minutes to cool down a bit, and the mozzarella should be melted now.

12. Serve with your dinner and enjoy!!
