It has been cold lately up here on the mountain. We even got a few inches of snow last Monday! With the cold weather, comes tasty, hot dinners. We like soup quite a bit around here. Not only does it taste good and warm you up from the inside out, but it’s generally pretty easy. This particular soup is super easy and requires very minimal effort, plus it’s cheesy and full of veggies! After a cold, snowy day; an easy, yummy soup is my favorite thing! This soup is so, so tasty. It is definitely one of my all time favorite recipes. I like to add potatoes to this broccoli cheese soup, but feel free to mix it up and make it your own! Add some cauliflower, or some chicken, or even some ham! You can even omit the potatoes for a low carb option. What ever sounds good to you, sounds good to me!
Ingredients:
- 3 cloves garlic
- butter for sautéing
- 3 1/2 cups chicken broth
- 1 cup heavy cream
- 3 cups broccoli, washed and chopped
- 2 cups potatoes, washed and diced
- 3 1/2 cups shredded cheese of your choice
- salt and pepper, to taste

Directions:
1. Melt the butter and sauté the garlic over medium heat until golden brown and fragrant.
2. Add in the chicken broth and heavy cream. Then the veggies. Give it a good stir.
3. Bring to a boil and then cover with a lid. Turn heat to medium-low and simmer until potatoes are soft, about 20 minutes.
4. When the potatoes are soft, slowly add in the cheese, stirring continually.
5. When all of the cheese has been mixed in and the soup is free of cheese clumps, season with salt and pepper to your liking.
Serve it in a bowl, topped with a little more cheese, and a side of good bread to dip in!
