Pumpkin Pie Cookies

Sometimes the holidays can be stressful. Even if you aren’t hosting a big dinner at your house, you still feel the obligation to at least contribute something, maybe a bottle of wine, a side dish, or a dessert. Well, if you are like me and dessert is your thing, then I’ve got you covered! These pumpkin pie white chocolate chip cookies are so easy and delicious! A fresh take on a classic holiday dish, and they are soft, pillowy, and not overly sweet. They will have your friends and family thanking you for bringing the best dessert to the party!

Ingredients:

  • 2 1/2 cups flour
  • 1 1/2 cups brown sugar
  • 1 tbsp cinnamon
  • 3/4 tsp baking soda
  • 1/4 heaping tsp baking powder
  • 1/2 cup butter
  • 1 1/2 tbsp vanilla extract
  • 1/2 can (about 1 1/2 cups) of a 30 oz can of pumpkin pie mix
  • 2 eggs
  • 2 cups white chocolate chips

*Makes about 18 large cookies*

Directions:

1. Preheat oven to 335℉

2. Mix together flour, baking soda, and baking powder.

3. Mix in brown sugar and cinnamon.

4. Melt the 1/2 cup of butter in the microwave. About 30 seconds or so.

5. Mix in melted butter and vanilla.

6. Beat in the eggs until well combined.

7. Add the pie mix and mix until completely combined. Batter will be wet and soft.

8. Scrape the edges of the bowl with a rubber spatula and then use the spatula to stir in the white chocolate chips.

9. Use a large spoon to drop spoonfuls (about 2-3 inches wide) of batter onto a greased cookie sheet about 2 inches apart.

10. Bake for 15 minutes. Cookies should be mostly firm to the touch, but not hard*

11. Remove from oven and let them cool about 5 minutes to stiffen up a bit before transferring to a cooling rack or serving. Enjoy!

*Cookies will be large and soft, and very delicious!
